Vanessa Fox

Vanessa spent 23 years with Jack in the Box Inc., advancing through leadership roles in real estate, franchise development, asset management, and executive development before serving as Senior Vice President, Chief Development Officer. During her tenure, she also held executive responsibility for Qdoba’s development and facilities organization, leading teams across real estate, architecture, construction, design, non-traditional development, asset management, and facilities for a multi-brand system and portfolio valued at more than $2 billion.

Her work included portfolio optimization, growth strategy, prototype development, remodel initiatives, capital planning, refranchising, and major asset transactions. Alongside responsibility for a large portfolio of corporate-leased and owned restaurant properties, Vanessa developed broad experience across retail leasing, ground leases, acquisitions and dispositions, sale-leaseback transactions, office leasing, and industrial leasing for distribution center operations. She also helped lead strategic divestitures, surplus asset strategies, and initiatives involving more than 2,200 corporate-leased or owned properties.

In her Qdoba leadership role, Vanessa oversaw development and facility management across the U.S. and Canada, expanded non-traditional growth channels, and supported development-related work tied to the successful sale of the brand to Apollo.

At Zaxby’s, she served as the brand’s first Chief Development Officer, building the development function and leading a comprehensive growth strategy that expanded the pipeline, supported entry into new markets, advanced prototype development, and strengthened asset management and portfolio planning capabilities.

Her additional executive experience includes serving as Chief Development Officer for REGO Restaurant Group and Sport Clips, where she supported development strategy, process improvement, and long-term growth planning.
